As summer settles over the Côte d’Azur, Zuma St. Tropez has reopened at the iconic Hôtel Byblos, bringing its signature Japanese cuisine back to one of the Riviera’s most storied addresses.

Following a well-received debut in Cannes last year, this marks Zuma’s second location on the coast and a welcome return to St. Tropez. Tucked into the gardens of Byblos, the restaurant offers an open-air setting where relaxed evenings unfold over carefully crafted dishes, fine drinks and understated design.

The menu reflects Zuma’s contemporary Izakaya style, encouraging sharing and a casual rhythm to the meal. Three open kitchens – including a sushi counter and robata grill – anchor the space, creating an atmosphere that is both lively and considered.

New for this summer is a short list of dishes developed specifically for St. Tropez. The Tartare de Boeuf, with its balance of beef, wasabi ponzu and a crisp kombu cracker, stands out as a subtle nod to local tastes. For dessert, the La Tropézienne blends sobacha tea cream, apricot and a hint of orange liqueur, finished with a light mascarpone sorbet – a fresh take on a regional favourite.

Design-wise, Zuma keeps things restrained yet polished. A sculptural bamboo bar, Japanese tilework and natural textures shape the dining room without distraction. The drinks list is as strong as ever, with a mix of sake, signature cocktails and a well-curated wine selection.

Whether arriving from the port or after a walk through the old village, guests will find a setting that feels both international and rooted in its Riviera surroundings. Open every evening throughout the summer, Zuma St. Tropez is set to be a steady favourite once again.
