Hôtel Hermitage Monte-Carlo unveils Gustave, a new cocktail bar beneath its Winter Garden, bringing fresh life to one of Monaco’s grandest settings.
Few hotel lobbies are as recognisable as the Winter Garden at Hôtel Hermitage Monte-Carlo. Beneath its celebrated glass dome, designed by Gustave Eiffel, generations of visitors have paused for afternoon tea or an aperitif before dinner. Now, the Belle Époque landmark has a new focal point.
Named Gustave in honour of the engineer behind the hotel’s iconic atrium, the bar—which opened in June —occupies five interconnected spaces beneath the dome, extending onto a newly created terrace where wroughtiron furniture, checkerboard stone flooring and abundant planting echo the character of the original winter gardens. Its opening coincides with the unveiling of the hotel’s new Diamond Suites, designed by Pierre-Yves Rochon, as Monte- Carlo Société des Bains de Mer drives the evolution of one of the Principality’s most emblematic properties.

At its heart is a cocktail programme created by head bartender Julien Lecharpentier, inspired by the Art Nouveau movement and the great cafés of Paris. The menu revisits classic ingredients through a contemporary lens, emphasising forgotten and lesser-known spirits. Signature serves include the Monaco—combining hop distillate, Lillet Rosé, Italicus and raspberry soda—alongside the Parsley Smash, which pairs London No. 3 Gin with peach wine, absinthe, verjus, and parsley-infused clarified milk.
The food menu brings together refined bar classics and more substantial dishes. Guests might begin with Kaviari Osciètra caviar or salmon gravlax cured with Monaco Gin before continuing with miso black cod or Charolais beef fillet, while highlights of the dessert menu include a citrus cheesecake and a rum baba served with Tahitian vanilla cream.


As Monaco moves into autumn, Gustave—open daily from noon until 1.00 am—offers a new reason to return to one of the Principality’s most beautiful spaces.
