This summer brings a new chapter to Pampelonne, St Tropez, as COYA debuts its first beachside outpost on the sands of Ramatuelle. Known for lively addresses in London, Marbella, Mykonos and Monaco, the group now folds its Latin American pulse into the Riviera’s easy rhythm with COYA Beach, opening for the 2025 season.
The setting is pitched at barefoot luxury. Designed by international studio First Within, the space leans into terracotta tones, sun-worn wood and hand-crafted Peruvian ceramics, softened by Mediterranean greenery. It is unbuttoned yet considered, the sort of place where a languid lunch drifts into a late afternoon soundtrack without anyone glancing at their watch.


On the plate, COYA Beach stays faithful to the brand’s sharing spirit with Peruvian flavours given a Riviera lift. Expect seafood to take the lead, bright with citrus and spice. The classic sea bass ceviche arrives with leche de tigre, red onion, sweet potato and jumbo corn. A lobster tail pairs white gazpacho with bisque and black lime. Lamb cutlets meet a piperade marinade and smoked aubergine caviar, while churros are served COYA-style with dulce de leche, orange and lime zest. It’s generous food meant to be passed around, matched to the ebb and flow of a day by the sea.
Cocktails orbit the Pisco Bar at the heart of the venue. House signatures include Margarita Amarilla with passionfruit and aji amarillo, the sparkling Pisco Royal lifted with lychee and champagne, and Agua de Leche that threads tequila, mezcal, coconut rum and ginger beer. The idea is simple: playful, precision-made drinks that feel at home on the Côte d’Azur.

Music, as ever with COYA, is more than mood. The in-house label, COYA MUSIC, curates deep house, Latin rhythms and afro house from lunch through sundown, with resident DJs and live sets nudging the tempo as the light softens. Service keeps pace with warmth and polish, whether you are under a parasol or stepping off the sand for a late coffee.
Practicalities are straightforward. COYA Beach opens seven days a week for Summer 2025, with the restaurant from noon to 5.30pm and the beach from 11am to 7pm. Sunbeds are available on Pampelonne’s Route de Bonne Terrasse, with classic beds from €80 for a single and €180 for a double, and first-line beds from €100 for a single and €230 for a double.
Consider it a polished new neighbour on the St Tropez shoreline, bringing Latin verve to Riviera ease.
