Much can happen in three years: economies are turned on their heads; start-ups take over the world; hitherto unknown stars ascend to global fame. And restaurants bloom from family ventures into local institutions. Such is the case with Chez Pierre, a culinary gem in the heart of Monaco. In just over 36 months, it has become cherished for its commitment to classic French cuisine, warm hospitality and familial charm.
At the helm is Pierre Baldelli, whose journey began at 16 at the legendary L’Escargot de Montorgueil in Paris. From there, he moved through Europe’s most prestigious dining rooms—from Le Manoir aux Quat’Saisons under Alain Desenclos to Marco Pierre White’s The Restaurant, where he became the youngest manager of a three-Michelin-starred establishment.
After a successful tenure at Cipriani London and opening Cipriani Monte Carlo in 2012, Pierre launched his most personal project in 2022: Chez Pierre. With over four decades of experience, he created a restaurant rooted in both culinary excellence and family values.


That spirit is what makes Chez Pierre so special to Monaco. Pierre’s sons Marco and Luca are ever-present in the dining room while his wife Kate oversees operations. In the kitchen, Michelin-star trained chef Frank Laut brings elegance and depth to every dish, his respect for tradition echoing the Baldelli dynastic ethos.
“As one of the few family-run restaurants in Monaco, some people are surprised we’re still here,” says Pierre Baldelli. “No signs, hidden, no sea view, no terrace, no live music and tough competition from what we call the ‘war machines’ with their unlimited budgets. It’s just the Baldellis and a loyal team.”
